食用胶(亲水胶体)是目前世界上广泛使用的食品添加剂,在肉制品工业中应用食用胶可以改善肉制品的品质、增加粘合性与保水性,赋予产品良好的口感,同时还能提高肉制品的出品率。那么现行实施的GB 2760-2014 《食品安全国家标准 食品添加剂使用标准》中有哪些食用胶应用于肉制品中呢?












根据目前实施GB 2760-2014《食品安全国家标准 食品添加剂使用标准》中在肉制品中添加的食用胶主要有:卡拉胶、黄原胶、瓜尔胶、魔芋胶、刺槐豆胶、明胶、琼脂等胶体。下面食用胶网就为大家介绍具体胶体在肉制品中的应用。

卡拉胶在肉制品应用

琼脂在肉制品应用

可以说食用胶在肉制品生产中发挥中重要作用,随着科技的发展和社会的进步,一些新型食用胶在食品行业中已崭露头角,如凝结多糖、亚麻籽胶、结冷胶等,它们在肉制品中逐步开始得到应用,这些新型食用胶除了具有传统食用胶的性质外,有的还具有特殊性质。例如,凝结多糖,其中热凝胶独特的高温不化性在肉制品加工中具有十分重要的价值,利用这一特性,可以进行肉类重组的开发,使肉制品在加热时保持产品的组织状态,不发生物理变形。

但是随着卡拉胶,琼脂等生产原料因气候变化导致减产,是的卡拉胶琼脂等的供应量逐年低于市场需求,一次价格逐年上涨。作为新一代的亲水食用胶体,结冷胶证逐步替代卡拉胶和琼脂等的应用。
